PB&J Overnight Oats

Who invented peanut butter and jelly? If you’re out there, I’m single. I could probably live off this unexpected, remarkable combination of flavor and texture for the rest of my life. Add that to overnight oats, another unexpected, simple recipe and you’ve got one damn satisfying breakfast.

You could say that overnight oats are cold and mushy. You wouldn’t be wrong. Or you could say they are refreshing, creamy yet chewy, and open to the flavor combinations of your dreams. Yesterday, I was dreamin’ of good ol’ PB&J. For this recipe, you’ll want to use creamy, salted peanut butter, which nestles pleasantly into the gooey oats. I prefer frozen berries to fresh, because they thaw overnight and their juices melt into the oats like hot fudge sinking into cold ice cream. You’ll wake up and breakfast will be there for you in the fridge, waiting to make your morning.

What you need

  • 1/3 cup rolled oats
  • 1 scoop peanut butter or vanilla flavored protein powder (about 2 TB)
  • 1 TB chia seeds
  • 1 tsp maca powder (optional)
  • 1/3 cup almond milk, more if you like it less thick
  • 1/2 cup frozen mixed berries
  • peanut butter and maple syrup (optional) for topping

What you do

-Mix together the oats, protein powder, chia seeds, and maca powder in a tupperware bowl that comes with a lid. Add the almond milk and mix well. Top with the frozen berries, some will sink into the oat mixture. This is not a bad thing. Cover and refrigerate overnight.

-Wake up. Work out (this makes an excellent, protein-packed post-workout breakfast). Or don’t work out if that’s not your jam. Protein powder is also beneficial for the less cardio-inclined.

-Take the oats out of the refrigerator. Awe at the science of this hands-off, ready-made breakfast. Top with peanut butter (at least a tablespoon) and a drizzle of maple syrup. Ooh and ahh.

*Note: you can microwave this if you want it warm, about 45 seconds on high.
